Peanut Butter Banana Protein Oat Bars

Ingredients:

  • 3 medium-sized very ripe bananas

  • ¼ cup peanut butter (almond butter can be a tasty alternative)

  • 1 tsp vanilla or caramel extract

  • 1 ¼ cup rolled oats

  • 2 heaping scoops of protein powder of choice

  • ½ tsp salt

  • ½ tsp baking powder

  • Optional add-ins:

    • ~1/4 cup mini chocolate chips

    • ~½ cup unsweetened coconut shreds plus more to top


Instructions:

  1. Preheat the oven to 350°F. Line a loaf pan with parchment paper.

  2. In a large bowl, mash the bananas until almost smooth. Add peanut butter and vanilla/caramel extract. Mix well.

  3. Stir in oats, protein powder, salt, and baking powder until combined. Fold in chocolate chips and coconut.

  4. Pour the mixture into the loaf pan, smoothing the top with a spoon or spatula. Sprinkle additional coconut shreds on top.

  5. Bake for about 30 minutes, until the top is no longer squishy.

  6. Optional step: Turn the oven to broil and toast the coconut on top for about 1 minute, turning as needed to prevent burning.

  7. Let cool before slicing into 8 bars. Enjoy immediately or store at room temperature for 2-3 days, then transfer to the refrigerator for extended freshness (good for 4-5 additional days).
